Our French suppliers are the key in being able to offer French classics such as Cassoulet, Braised Rabbits and Duck, be it fresh or confit. We aim to offer an authentic experience using Romanzini snails which are guaranteed wild, Label Rouge rabbits which are raised in Brittany and the Loire Valley.
Running alongside these French influences are also a desire to use local produce. Our Lamb is from near by Lighthorne, and we not only use the choice cuts, we also endeavor to use more interesting cuts to create fabulous salads such as Sweetbreads w/ pickled cauliflower and Salad of Lamb's tongue with Gribishe sauce. Pork Products are from Warwickshire bred pigs and our Fillet and Rump steaks are from Warwickshire Cattle.
It takes more than just good quality cuts to create great dishes, we combine these with a quality dry store which include local farm eggs, and even extra virgin rape seed oil from Cheltenham.
